Yummy Ham and Potato Soup

I have been in the mood for comfort food lately. The weather here in the South has been unusually warm and suddenly winter has arrived. I dug around in the pantry and found some potatoes that needed to be put to good use. I did my usual recipe search on Allrecipes.com and came up with this recipe for Delicious Ham and Potato Soup. I tweaked the recipe to my liking and here is what I came up with:

Delicious Ham and Potato Soup

Serves 10

6 cups water

1 ham bone

1 cup diced ham

1/2 cup finely diced celery

2/3 cup finely diced onion (or 1/2 large onion)

8 cups peeled, diced potatoes

1 tsp black pepper

1 tsp salt

4 Tablespoons butter

4 Tablespoons flour

2 cups milk

2 cups half and half

Shredded cheddar cheese (optional)

Place the water, celery, onion and ham bone in a large stock pot. Boil until small pieces of meat are falling off of ham bone. (About 20 minutes)

DSCN1589I removed the ham bone from the pot and cut off the rest of the usable meat and placed that back in the soup pot. Next add the potatoes and boil until tender. (approximately 15-20 minutes depending on how small you dice the potatoes.)


Next add salt and pepper. I used the amounts listed in the recipe above, but you can season it to taste. In a separate saucepan, add butter and melt. Whisk in the flour until smooth and then slowly add the milk and half and half. This makes a thickening for the soup. I used a potato masher and placed it in the soup pot to mash my potatoes. We like our soup thick and not very chunky. Then I added the milk and flour mixture to the soup pot. Mix well and let simmer for about 20 minutes. Serve with shredded cheese.
